Coconut Muffins

These Coconut Muffins are yummy! Try this unique muffin recipe.

INGREDIENTS:

2 cups self-rising flour

1/2 cup sugar

1/4 cup firmly packed light brown sugar

1 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1 egg, lighty beaten

3/4 cup whole milk

1/4 cup unsalted butter, melted

1/4 cup flaked coconut, sweetened

3/4 cup chopped macademia nuts

1/4 cup sugar

1/4 cup flaked coconut, sweetened

1 tablespoon butter, softened

1/2 teaspoon ground cinnamon

DIRECTIONS:

  1. Preheat oven to 400 degrees F. Coat 12 muffin cups with non-stick cooking spray or insert paper liners.
  2. In a large bowl combine the flour, 1/2 cup sugar, brown sugar, 1 tsp cinnamon and nutmeg.
  3. Stir in the egg, milk and 1/4 cup of melted butter just until moistened and smooth. Stir in the 1/4 of coconut and the nuts.
  4. Spoon batter into each muffin cup.
  5. Combine the 1/4 cup sugar, the coconut, cinnamon and butter. Sprinkle over batter. Bake for 17 to 20 minutes until a toothpick comes out clean. 
  6. Cool for 5 minutes before removing from the pan onto a wire rack.
